It’s been an incredible weekend with so many Spring activities! Weekends are for fun and getting projects done. Preparing meals really begins to become almost a burden during the summer months. One of the easiest meals for my family to prepare is some kind of meat that gets thrown on the grill. I prepare a side salad with lots of fresh veggies, a baked sweet potato and usually corn on the cob. Simple-Yes! But, I don’t eat burgers, and that’s what was on the grill this weekend. I was so happy to pull out one of my Zoom Burgers from the freezer, put it in my dehydrator for about 15 minutes and wahla! I had a fantastic “burger” I could eat with my family.
The Zoom Burger recipe got it’s name by combining zucchini and mushrooms together to make this savory burger. It’s absolutely delicious, and has by far been the most requested recipe I’ve been asked to share since returning from the Living Light Culinary Institute. There’s a few tricks to know to make the recipe really come together.
I’ll also be teaching this recipe at my June Viking Cooking School class. Make time to work up a double batch of Zoom Burgers and freeze some for your crazy weekends, when time just flows by and you don’t want to spend it in the kitchen.
