I have been riding in the MS 150 bike tour for the last 10 years. It’s a fun event made extra special because I ride with a wonderful group of friends!! The night before our first day of riding we all share a meal together of pot luck fare. This year I’ll be bringing a huge green salad with greens from my farmer’s co-op. I love the idea of infusing my friend’s bodies with luscious greens!
When you are riding for several hours the common strategy of many athletes is to “carb up” the night before on pasta and starch! The idea is that these calories will get be turned into fuel the next day.
When you can’t eat gluten- you have to make other crab loading choices. I have found quinoa is a wonderful vegetarian protein, when tossed with some vegetables and a tasty broth can double as a perfect carbohydrate source for the fuel I will need!!! I’ll be making Moroccan Spiced Quinoa with some of the carrots from my Bell Garden CSA share this week!!!
