Chia pudding is a quick treat to have at anytime of the day. I LOVE this treat as an alternative to yogurt. People don’t realize that yogurt from cow’s milk can contribute to weight gain. We’ve been led to believe that it’s a “diet” food. This is far from the truth – and now you have a great – tasty- and easy alternative!!!

Basic Chia Pudding Recipe:

4 cups raw organic fruit (frozen is OK)

1/2 cup chia seeds

1/2 teaspoon stevia (flavored is nice)

2 tablespoons fresh lemon juice

Mix in your high speed blender until it looks like pudding.

Belize was one of our destination islands on our Cruise. I got so excited when we drove by a cashew tree. It was so fun for me to see and taste one of my favorite nuts up close!!! This short video lets you see the fruit and my opinion of the fruit! As many of you already know, the raw cashew is used in many RAW recipes as a substitute for creamy dairy. I personally have cashews as the base for my Orange Raspberry Cheesecake and my Nacho Cheese recipe in my GO RAW ebook. We also came across a vendor who was selling Cashew wine! It did not taste that great – but was lots of fun to try!! It sure made the cave tubing much more fun – hee hee!!!

I’m just returning from a 7 Day cruise in the Caribbean! It was lots of fun and lots of sun! I have cruised before so I knew what to expect when it came to the food offered on a cruise ship. I was much better prepared this time and had a very successful food adventure. There is plenty of raw fruits and vegetables offered in the buffet lines for both the breakfast and the lunch option. And I was happily surprised at the options for “mixed” salads which included dishes like; fresh carrots with raisins and broccoli with a tangy sauce. Cruise ships are noticing the change in America’s diet as it relates to dairy and gluten free options. You had to go to the dining room to get these substitutes. I asked to speak to the head hostess our very first night. I enrolled her in my quest for healthy options. She is the person who has the week’s menus and could put in special request with the Chef. So, each evening she would stop by my table with the next day’s dishes and we would pre-select what I would eat. By the third evening she also started suggesting dessert options that the Chef would prepare just for me. I enjoyed fruit sorbets and soy milk puddings loaded with fresh fruit. I don’t use soy milk at home, but it was a lot of fun to have a creamy dessert when everyone else at the table was enjoying cheesecake!

I also traveled with some prepared food of my own. I made several individual baggies of trail mix. With soaked and dehydrated almonds and pecans, sunflower and pumpkin seeds, dried fruit and dark chocolate drops. I brought my own dehydrated crackers and macaroon cookies. And of course, I had plenty of my Green 20 and LIv Sxinney cholorphyllin drink to add to my water each day. The days we went into Belize, Cozumel and Rouaton, I actually enjoyed their local cuisine. It was such a treat to have beautiful greens served with lots of fresh vegetables. Rice and beans are a staple and were served with wonderful spices – yummy.

My TOP 3 suggestions I have for traveling successfully with a special diet.

1. Before you arrive – make calls, check on-line and plan where you will eat at restaurants or what the resort, cruise or destination will provide. Let them know you have special food needs and enroll them in your quest to eat healthy. You’ll be surprised how people want to go out of their way to accommodate you! If they don’t – then choose a different option.

2. Pack treats, supplementation and homemade items with you. When you’re on vacation or traveling for business you may be subjected to even more stress than normal – a time when you’re body needs to supplement! I want to feel good every day I’m traveling, and that’s usually in direct correlation to what I’m eating. So, don’t leave it up to chance. Always have bars, treats, trail mix that fits your diet with you at all times.

3. Be creative in your packing. I’ve recently meet someone who said she travels with her VitaMix – even on airplanes! I don’t know if you need to go to that extreme – but what about packing a Magic Bullet or similar device so you can continue to enjoy smoothies and juices on the road. Obviously, this is a lot easier if you’re traveling by car. It’s worth considering if you’re really wanting to make the most of your health while you’re out and about, enjoying the world.

I’ll bet you’d be hard pressed to find anyone in America who would say sugar is good for you? We’ve been educated by Dr. Oz, hundreds of authors for weight loss books and now all kinds of on-line programs that tell us we need to cut back on sugar. But, do we really understand what we’re doing to ourselves by eating sugar? The new research indicates there’s a real tradeoff going on when we choose to consume sugary drinks and processed foods. This video footage from CBS is one of the best reports I’ve seen as to why you would want to examine your own intake of sugar. When we prepare sweet desserts using natural ingredients we still give our bodies the glucose it needs for energy – and we are feeding our body nutrients that it actually knows how to digest.

Easter is coming – think about filling your child’s Easter baskets with fruit, puzzles, fun drawing pens, craft items and books.

It's that magical time of year when the possibilities feel endless and your super hopeful that this will be the year when you'll get a bumper crop of tasty fruits and vegetables. I'm one of those people who has to rely on the goodness of my friends to supply me with their overgrown tomatoes & zucchinis. We know it will be months before we'll be picking anything from our garden - and yet, we CRAVE great produce now!!! Did you know there is a fantastic local produce resource right in town? The Utah Co-op has been around for 5 years - and I'm just now finding out about it. You won't find a better offering of locally grown fruits and vegetables anywhere. They stock gluten free items as well as many unique food items that I have not seen anywhere else. You've got to visit the refrigerated section - wonderful surprises in there. I pre-ordered a box of "juicing produce" and was elated when I saw how large the offering was! This entire box was only $25. Here are the details for visiting and pre-0rdering your own produce box. Location: 4892 S. Commerce Drive (300 West) Call 801-556-2223 for pre-ordering Open on Thursdays from 11-2pm, Friday & Saturdays from 11-6PM

It’s hard to think about St. Patrick’s Day without thinking about green beer and cabbage. Boiled or braised, cabbage is usually on the menu with corn beef – a traditional Irish meal. I love any day that makes us think about vegetables – and so I’d like to share my little twist on serving cabbage – raw and alive!!
Cabbage is one of those great vegetables that has a high anti-inflammatory response in our bodies. It also helps to pull and remove heavy metal toxins from our tissue. You can juice cabbage with celery, ginger and apples for a terrific detoxing elixir!! My favorite way to consume cabbage is in a slaw! Simply shred it through your food processor, add in other vegetables and a hand full of golden raisins and a sweet dressing and you have a salad with lots of flavor!!! Serving this to your hungry friends as they gather for a night of fun – could get you the title of BEST “GREEN” Hostess!!
Cabbage & Pineapple Slaw
Yields: 8 servings
1 small head of cabbage (1 1/2 to 2 pounds)
1 cup fresh chopped pineapple
2 carrots, grated
1/4 cup golden raisins
1/3 cup olive oil
1/4 cup rice vinegar
1/2 sea salt
1/4 teaspoon white pepper

Remove the outer leaves of the cabbage, rinse, and dry. Remove the core and finely chop the cabbage (which can be done in a food processor).
In a large bowl, mix the cabbage with the remaining ingredients. Chill an hour before serving.

I’ve received such wonderful feedback from many people who have done the 10 day Rejuvenation Juice Fast. One woman was plagued with a chronic headache before the cleanse and now, 2 weeks after the cleanse she still has not had one. Another young mother is just finishing the fast and has lost 12 pounds. She feels more agile and can keep up with her 6 children now. I’ve also heard from several people who challenged themselves to eat 100% raw since the beginning of the year. They feel good….. and bad. So, if raw food is suppose to be good for you – why would anybody NOT feel fantastic!

The answer is, whenever you improve your diet, you’re body is finally in a position to release what it does not need any more – toxins and fat. The addition of toxins into the blood stream can have an affect on how you feel physically and emotionally. Detoxing is a good thing! In fact, I would go so far to say that it sets the foundation for your health. A body that is filled with heavy metals, food additives, pollution and a variety of other man-made toxins is not going to live to it’s highest potential. When we release – we literally set our body free to burn metabolism hotter, refresh and rejuvenate our tissues, muscles, and joints, and to reset the production of hormones and enzymes. All of this equates to more energy, better health and more weight release. But, what if you keep feeling lousy and the detoxing seems to be going on forever – does that mean that a RAW diet is not good for you?

This is were a session with a qualified raw food coach would really benefit you. Because it isn’t the raw food that’s making you feel tired, stomach aches, skin problems, bad breath, etc. It’s the selection of raw foods that are keeping you in a detoxing state. Let me give you an example. Let’s say you have decided to GO RAW for 30 days. Your typical day is green smoothies for breakfast and lunch and you’re eating a large green salad with lots of raw vegetables for dinner. You start out great, but within 2 weeks your feeling weak, tired and the frequent bathroom breaks have left you feeling depleted. You’ve experienced some weight release too, so you’re committed to stay with it, but in the back of your mind you’re ready for the 30 days to be over so you can get back to eating real food! What you don’t realize is, you’ve selected great foods but without a better ratio of fats and dehydrated foods – you’re body will begin to detox! The greens from all 3 meals are filled with chlorophyll – which is a fantastic phyto-nutrient and very important for our health. Chlorophyll is also terrific for detoxing – pulling the “bad” stuff out of our cells and throwing it into our blood stream for quick removal.

If you want to take a course of action of going through a detox for 7 – 10 days and then put your body back into balance, I recommend a juice fast or smoothies for those first days. Then review your lifestyle. Begin replacing meals with raw foods or parts of a meal with whole food selections. Example, breakfast and lunch are easy to eat raw. You can have my Granola to Go with lots of berries for breakfast. You can make up my Lentil Tabouli for lunch and enjoy it for the next day too. The sprouted lentils are great protein sources and add bulk to your meal which is not detoxing!!! These recipes are all available in my GO RAW ebook. Embrace the detoxing symptoms as necessary and rejoice when you’re on the other side of them, feeling better then you have before!
