Wow! What a treat to find such a fantastic shredded salad – already made and ready to eat. This salad has broccoli, shaved brussels sprouts, cabbage, kale, chicory, and a packet of dried cranberries and roasted pumpkin seeds. It also includes a poppyseed dressing – which was mostly sugar. So, I created my own protein dressing to cover the greens. Happy to share it with you here!
CASHEW ORIENTAL DRESSING
2 cups cashews, soaked for at least 4 hours
2 Tablespoons fresh ginger, peeled and chopped
1 clove garlic, cut into 1/4′s
1 teaspoon sea salt
2 Tablespoons lemon juice, fresh squeezed
water as needed
Drain and rinse cashews and then place in a High Speed Blender. Put all other ingredients plus water to add smoothness. Blend on low for about 30 seconds and then blend on high for up to 3 minutes, pushing the nuts into the blades. You want this to be completely smooth.
Once the dressing is made – then put greens from 7 Super Food Salad in a large bowl, pour dressing over it and mix well. I included Dulse with the greens, and it was delicious and added lots of extra iron to the meal. Sprinkled sesame seeds on top.
JOLINE’S TIP: Begin soaking the cashews in the morning before you go to work. Then when you return home you’ll have dinner ready in under 10 minutes. Also, if raw cabbage and brussels sprouts gives you “the wind” -be sure to take a BEANO before you consume. Your friends will be glad you did!!
