It has been two years since I’ve been gluten free. It was not something I planned on doing. Giving up wheat and all things with gluten, was something my body was demanding. I had severe symptoms that were becoming more and more debilitating. Thank goodness it was something as simple as just giving up wheat! Initially I was diagnosed with Irritable Bowel Syndrome from an Internal Medicine physician. I had failed the Celiac Disease blood test so his course of action was to put me on a lifetime of prescribed medicine for my sick bowels.
But, I had been experimenting with cutting bread and crackers out of my diet. I can only imagine what diseases would have been in my future if I had taken his advice and continued to eat gluten. By eliminating gluten in all of its forms from my diet, I have completely changed my health and in my heart I believe I have added a decade or more to my life!!!
So, I’ve taken to the recipe books, bought lots of different ingredients and have been looking for the perfect gluten free muffin recipe. This one has come close! Zucchini is fresh from the garden right now-so this really brings a smile to my face! I hope you have the same success with this recipe.
