I confess I am not very proficient at opening young coconuts even though I love everything about them! The water of a coconut is rich in electrolytes. Apparently, they are the closest equivalent to human blood and have actually been infused directly into our bodies under extreme circumstances.
During my stay at the Living Light Inn this month, my RAW food friend, Diana (who is also a chef) demonstrated how to use a great technique for coconut extraction!!!
I love using the coconut meat in smoothies, puddings and other desserts. Here’s one of my new recipes for kids and adults! Yumm Chocolate-Cherry Popsicles!
