I recently had an opportunity to share a Holiday recipe with my friends from Liv International. It was so much fun to demonstrate this quick and easy recipe. This cranberry recipe is best made a day or two ahead of time so the flavors all meld together. I’ve also used this sauce on top of a cashew pudding – it was just the kick the pudding needed to take it from something ordinary to extraordinary.
Holiday Cranberry Sauce
Yield: 2 cups
Equipment needed: Vita-Mix or other Hi-speed blender
12 ounces fresh cranberries, rinsed
1 cup fresh pineapple
1/2 apple – leave the skin on
1/3 cup honey
1/2 teaspoon cinnamon
pinch of salt
1/3 cup walnuts, soaked and dehydrated, chopped (optional)
1/3 cup gold raisins (optional)
Place all ingredients except the walnuts and raisins in the Vita Mix and process until somewhat smooth. Do not over mix.
Put sauce into bowl and stir in the walnuts and raisins. Refrigerate and serve.
