Serve in either a wine or martini glass. It can be complimented by a crumbly nut crust and served as a pie!
3 avocados
1/2 cup plus 2 Tablespoons maple syrup
2-4 Tablespoons organic evaporated cane juice(optional-for sweeter tooth)
1-2 tsp non-alcohol vanilla extract
2 Tablespoons cold-pressed coconut butter
1 tsp balsamic vinegar(aged is best)
1/2 tsp shoya(soy sauce)
1 cup cocoa powder RAW
1 pint raspberries or sliced strawberries
Fresh Mint Leaves
Equipment Needed: Food Processor
Blend avocados(scooped out of the skin without the pits), with sweet ingredients vanilla and coconut butter until smooth.
Sift in cocoa to prevent lumps
Process again until smooth
Layer with fresh berries in wine or martini glass and top with fresh mint leaves.
This mousse will stay fresh in a sealed container in the fridge for up to a week.
Can be frozen
Joline’s Notes: I used coconut oil instead of the coconut butter and found it to work just as well. I do NOT add the additional cane juice- this is rich enough!
Don’t refrigerate with the sliced fruit for longer then 24 hours. They begin to deteriorate and alter the taste of the mousse.
