1 T Olive oil
1 red onion, sliced into rings
2 garlic cloves, thinly sliced
1 Teaspoon Coriander
1 t. cumin
½ – 1 t chili powder
8 oz. vegetable stock
2 cans black beans
½ cup quinoa
Juice of ½ limes
Sea salt and ground black pepper
To serve: large handfuls of cilantro, roughly chopped
4 wedges of fresh lime
Heat the oil in wok or frying pan. Sauté onions over moderate heat for 5 min., until soft and starting to turn golden. Add the garlic, spices and cook for another 3 minutes.
Pour in stock and quinoa, simmer for about 20 minutes, until liquid is reduced. Add the beans and heat them through. Stir in the lime juice and season with salt and pepper.
Scatter the cilantro over the beans. Serve with warm whole wheat tortillas and wedges of lime.
Gluten free option – serve beans inside lettuce – treat like a lettuce wrap
