The brown rice allows this dish to be a great vegetarian entree. You can also serve the chickpea stir fry as a side dish without the rice. Chickpeas have been used as a staple in the Mediterranean cultures for centuries. They are an excellent source of protein and fiber.
1 tablespoon virgin olive oil or coconut oil
2 medium onions, sliced
1/2 teaspoon cumin seeds
1 small red bell pepper, cut into strips
1 tablespoon water
3 scallions, chopped
1/2 cup pitted greek black olives, chopped
2 can’s (14-19oz) chickpeas, rinsed and drained
2 cups chopped fresh basil
2 cups hot cooked brown rice
Step 1. Heat the oil in a large nonstick skilled over medium-high head. Add the onions and cumin seeds and cook, stirring frequently, for 7 minutes.
Step 2. Add the pepper and water. Cover, reduce the heat to low, and cook for 2 minutes.
Step 3. Add the scallions, olives and chickpeas and cook for 2 minutes.
Step 4. Remove from the heat, and add the basil. Serve with the rice.
