Calories per Tablespoon
Fantastically flavorful and very low in calorie, you can generously pour this colorful dressing over greens or a mixture of veggies. If you like garlic and herbs, feel free to add them freely to this recipe as they have almost no calories.
Prepare the dressing a few hours, or even a few days before serving, to allow the flavors to blend and mellow.
Tightly covered, it will stay in the refrigerator for a week.
1/2 cup water
2 1/4 teaspoons arrowroot* mixed with 2 1/4 teaspoons cold water
4 teaspoons extra-virgin, cold pressed olive oil
2 1/2 teaspoons fresh lime juice
2 1/2 teaspoons red wine vinegar
1/8 teaspoon Tabasco sauce
Small pinch of vegetable seasonings (or salt)
1/2 garlic clove, minced
1 Tablespoon chopped fresh basil
1 1/2 teaspoons chopped fresh parsley
1 1/2 teaspoons chopped chives
The “secret” to this low fat dressing is the thickening agent used to create a dressing which looks and tastes just like those dressings that use oil as their base. Prepare the thickening sauce first.
Bring the water to a boil in a small saucepan, then whisk in the arrowroot mixture, which will instantly thicken the water. Remove from the heat, pour into a small bowl, and let cool.
Stir in the remaining ingredients.
Seal in a glass container and refrigerate immediately.
Makes about 3/4 cup
*Arrowroot is found in most spice sections in your local grocery store. I also like to use Ultra Maxi Gel from The BlueChip Baker in Salt Lake City. Their products can be found at www.bluechipgroup.net. They cater to the gluten free population.
