
Yields: 8 servings
1 small head of cabbage (1 1/2 to 2 pounds)
1 cup fresh chopped pineapple
2 carrots, grated
1/4 cup golden raisins
1/3 cup olive oil
1/4 cup rice vinegar
1/2 sea salt
1/4 teaspoon white pepper
Remove the outer leaves of the cabbage, rinse, and dry. Remove the core and finely chop the cabbage (which can be done in a food processor).
In a large bowl, mix the cabbage with the remaining ingredients. Chill an hour before serving.
