I love the look of a beautiful head of Cauliflower-but I’m usually the only one in the house who will eat it raw, so what do I do with the rest??? I created this side dish one Sunday night when I was out of potatoes. What a surprise when both my husband and my teenagers piled it on their plates.
1/2 head of cauliflower – cut into chunks and steamed – 15 minutes or until very soft
After steamed, place into food processor and add these ingredients:
2 Tablespoons mayonnaise
1 Tablespoon Dijon mustard ( or other course mustard)
1 Tablespoon cold pressed olive oil
Salt & Pepper to taste
Process until consistency of mashed potatoes.
I’ve topped this off with fresh corn or cooked peas-love the added texture.
