Serves 5-6
1 TBLS olive oil or grape-seed oil
1/2 cups sweet onion, chopped fine
1 carrot, chopped into very tiny pieces
2 slices red pepper, chopped fine
1-2 garlic cloves- minced
Put all of the above items in a sauce pan and let them sweat for about 5 minutes.
Add:
2 cups vegetable broth
1 1/2 cups quinoa
Bring to boil and then simmer for 20 minutes.
Great dish next day, cut up other veggies on top, mix in olives and have for lunch!!!
